A Delicious Low-Histamine Carrot Soup

Always ensure that each ingredient you use doesn’t contain any additives or other ingredients that might be high in histamine.

Freshly cooked and consumed is the best way to ensure the lowest histamine levels in your food.

In addition, you can cut out much of the cooking time by throwing everything into a blender that is a soup maker (like a Ninja) and just coming back in half an hour when it’s ready.

Serve with a simple pea shoot salad on the side, in order to tick every histamine-friendly box.

Ingredients: (the tick means generally low-histamine)

  • 6 large carrots, peeled and chopped (✓)

  • 1 small zucchini, chopped (it’s a low-histamine veggie that adds creaminess) (✓)

  • 1 medium-sized potato, peeled and diced (to add thickness) (✓)

  • 1 tablespoon extra virgin olive oil (✓)

  • 4 cups of water or homemade low-histamine vegetable broth (Many store-bought broths contain ingredients that aren’t suitable for a low-histamine diet, so always double-check or prepare your own.) (✓)

  • Salt and pepper to taste (✓)

  • Fresh low-histamine herbs (optional) (✓)

Instructions:

1. Bung in the soup maker. Well that’s what I do anyway. Come back half an hour later. Job done.
