Lets talk low-histamine sauces and dressings
I’ve been making a lot of good-tasting stuff with Verjus, pronounced vehr-ZHOO.
It is a sort of vinegar made from the juice of unripe grapes. (It can also be spelled “verjuice”) 🍇
Verjus is made with any unripe grapes, even wild ones. They pick them the moment a few start to turn color.
It is low-histamine and delicious. 👌
